Menu Plan Monday - Week of 1/27/14





Last week's meal plan went off without a hitch! The stuffed shells were soooo delicious! 


Monday: leftover pizza

Tuesday: Mama's Spaghetti Casserole

 Wednesday: leftovers

Thursday: Cheesy Tater Tot Casserole

Friday:  leftovers

Saturday: Slow Cooker Salsa Chicken (or dinner out with the in laws)

Sunday: Super Bowl!!! We are going to have some snacky appetizers and easy pull apart pizza bread at halftime

Dessert of the Week: for the Super Bowl... birthday cake dip with nilla wafers and pizza crumb. YUM!

Menu Plan Monday - Week of 1/20/14


I am a little bummed that I did not do a menu plan last weekend... I actually bought meat?!?! and made some amazing pork chops! Gotta refine the recipe before I post it. I also made a dessert from an old church cookbook that my mom gave me, from the very first church I ever attended. I want to make some recipes from there throughout the year, This week it is supposed to get really cold, so I am going to make some soups and warm stuff.

Here are my food resolutions this year...
~ Do at least 8 Daring Bakers Challenges. I have already done this month's! It will be posted the 27th!
~ Make a few homemade items such as granola bars, applesauce and bread (which I have made before) etc!
~ Post a recipe a week - and find a new photo sharing site to more easily upload pictures
~  Save our favorite recipes and remake them! I am so bad at making recipes more than once! Also write down the favorites ones and cookbook ones to keep them all in one place.

We'll see exactly how well that goes :) I know I need to narrow them down to some specific items.

This week is a regular week, with nothing going on the weekend. Last weekend was insane, so I am looking forward to some down time!

Monday: Hamburger Stuffed Shells (halving recipe)


Tuesday: Slow Cooker Potato and Corn Chowder

 Wednesday: leftover chowder

Thursday: Crock Pot Pizza Chicken

Friday: leftovers


Saturday and Sunday: pizza, hopefully!

Dessert of the Week: I THINK and HOPE that we will finish all of our Christmas junk this week. It's so sad... I bought less than usual but we still have so much! We are eating in moderation :D

Menu Plan Monday - Week of 11/18/13


Hastily thrown together plan this week - I have been called up for Jury duty so plans may change at any moment! The only other time I received the notice about it, I was in college in another state, so it was an easy out. Now, if I get called in, I am hoping they will let me go because I have nobody to watch the kiddo for an extended period of time.I don't mind doing my duty, but things are so complicated when you throw a kid into the mix! So who knows if this meal plan will pan out or not.

Monday: Crock Pot Pizza Casserole (from last week)

Tuesday:  leftovers

 Wednesday:  Crock Pot Chicken and Dumpling Soup (combo of this recipe and this recipe)

Thursday: leftovers

Friday: pizza delivery

Saturday and Sunday: whatever you can rustle up! We are decorating for Christmas this weekend :D

Dessert of the Week: need to make cookies for a cookie exchange! Not sure which ones yet

Menu Plan Monday - Week of 9/2/13






Happy September!! Well... it might not officially be fall yet, but I couldn't resist using this banner :D September starts our busy months... Already we have something going on every week this month and into October! Not to mention that J. is back to work and E. starts his 2 year old class 2 days a week, so our schedule is totally changing! I love that fall is a time of change :)

Menu Plan Monday - Week of 6/3/13



No menu plan last week... the long weekend got me all off track. We did ok, but once again I was reminded how menu planning just makes everything go more smoothly. Also check back this week for the soft pretzels bun recipe - thy were amazing!! This week I turned to Pinterest for inspiration - we are going on 2 weeks of E. waking up between 5 and 5:30 a.m., and I am too tired to think!!

Crock Pot Chicken Parmesan

Crock Pot Chicken Parmesan
Don't let that bad picture fool you - this recipe is delicious! It is simple to make, and it does taste like pan made chicken parm! But all it takes is a few minutes of prep (no pre cooking!) and a couple of hours in your slow cooker. I actually made this one as written! SHOCKING I know. lol But with seasoned breadcrumbs and real Parmesan cheese, I didn't even need to change the spices. Ok, I did sprinkle the leftover breadcrumb mixture on the top of the chicken before cooking, as you can see below. But that is it! The leftover cooked sauce I used on pasta. Yummy!!!


I used 3 chicken breasts in this recipe - 4 would be perfect


Crock Pot Chicken Parmesan 
(this is NOT my recipe, but i don't know where it is from!)

Ingredients 
2 to 4 boneless, skinless chicken breast halves
1/2 cup Italian Seasoned Bread Crumbs
1/4 cup Parmesan Cheese
1/4 t black pepper
 1/4 t salt
1 TBSP olive oil
1 egg, beaten
 sliced or shredded mozzarella cheese
favorite jarred marinara sauce

Instructions 
Spread the 1 TBSP of olive oil into the bottom of your crockpot.
Beat the egg with a fork in a separate bowl.
Mix the bread crumbs with the seasonings and the Parmesan cheese in another separate dish.
Dip the chicken into the egg, then into the bread crumb mixture, coating both sides with crumbs, cheese and seasonings.
Place the chicken breast pieces in the bottom of the crockpot.
Layer 2-3 slices or 1-2 cups of mozzarella cheese on top, depending on how much cheese you like.
Cover chicken and cheese with entire jar of marinara sauce.
Close lid and cook on low for 5-6 hours or high for 3. Serve with your favorite pasta.
