CLOSED - Radical Review Wednesday: Seventh Generation Diapers Review and Giveaway



It has been a milestone week in our household! Friday was E's 3 month checkup. He weighed in at 11 lbs 15 oz and is up to the 27th percentile! Woo hoo! On Sunday he rolled over from front to back, twice! I also have noticed that his size 1 diapers have gotten tighter, and he is leaking out of them a bit more. The first thing I noticed about them was the lack of color. They look very natural and are not full of cute cartoon characters. I was surprised at how soft they were - not as soft as some other brands but definitely softer than some I have tried. And no gross chemical smell. The diapers fit Baby E. perfectly and did not leak overnight! Really, the only thing i didn't like was the Velcro - I love that it is long, but that means it gets tucked behind the baby's body and is hard to open.

Crock Pot Chicken Cacciatore

To balance out the so bad they are good S'mores bars recipe I posted yesterday, I made a Weight Watchers friendly crock pot recipe, from the wonderful LaaLoosh blog

I didn't take a pic, so here is the one she posted:

My changes: tomatoes with Italian spices in them, garlic powder (forgot to buy garlic!), scallions instead of onions and no pepper. I also accidentally bought chicken tenderloins, which worked OK but chicken breasts would definitely work better.

Crock Pot Chicken Cacciatore Recipe

Ingredients:
- 1 28oz. can tomatoes, finely chopped and un-drained
- 1 10oz. can Healthy Request Tomato Soup
- 1 1/2 tsp. Italian seasoning
- 1/2 tsp. dried minced garlic
- 1/2 cup sliced mushrooms, fresh or canned
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped onion
- 16oz skinned and boned uncooked chicken breast cut into 4 pieces
- Non Fat Cooking spray
Directions:
In a crock pot container sprayed cooking spray, combine un-drained tomatoes, tomato soup, Italian seasoning and garlic. Stir in mushrooms, green pepper, onion and chicken pieces. Mix well to combine. Cover and cook on low for 6 to 8 hours. Evenly spoon sauce over chicken to serve.
Entire Recipe makes 4 servings

Each serving = 5 Points +
PER SERVING: 204 calories; 4 g fat; 25g protein; 17g carbohydrates; 2g fiber

Peanut Butter S'mores Bars

Since S'mores at the hottest trend, and I had some marshmallows leftover from Christmastime, I decided to make a S'mores dessert for the 4th of July.
I settled on this recipe from idle wife. (there are A LOT out there!)
Of course, I only had large marshmallows. And, upon further review, only a milk chocolate/peanut butter chips combo. But I forged ahead anyway.
And then after it was done, I realized I got the amount of butter  in the crust wrong, so the crust is really crumbly. (and excellent on ice cream!)

And this was the result:

It is delicious, if not difficult to eat. The best part: some of the peanut butter chips didn't melt all the way, so occasionally you'll get an extra bite of peanut butter. mmmm.

graham cracker crust

1 1/2 cups graham cracker crumbs
3 tablespoons sugar
1/4 teaspoon salt
1/3 cup butter, melted

Line a 2 quart rectangular baking dish (or any dish you think will work. Smaller = thicker; larger = thinner) with parchment paper and set aside. In a bowl, mix the graham cracker crumbs, sugar and salt together. Add the melted butter and stir until the graham cracker crumbs are thoroughly moistened. Press evenly into the prepared baking dish and bake at 350 degrees for 10 minutes. Allow to cool completely.

chocolate confetti squares

1/4 cup margarine
1/2 cup smooth peanut butter (lite is all right)
1 cup chocolate chips
250 g mini marshmallows

In a medium sized pot, melt the margarine and peanut butter together. Remove from heat and stir in the chocolate chips. Stir until they've completely melted into the peanut butter mixture. Allow the mixture to cool to the point where you can comfortably place your hand on the bottom of the pot (be careful not to touch it too soon). Add marshmallows and stir to coat. Spread evenly over the graham cracker crust and put the whole thing in the fridge until fully set. Lift out of the dish using the parchment paper, cut into squares, and enjoy! It's best to keep these refrigerated.

Happy 3 Months!!!

Cannot believe my little man is 3 months today! Finally!!! time is still going at a snail's pace. He just got out of a growth spurt - not only is he bigger (his head sticks out of the Baby Bjorn now!) but he now reaches out to grasp things. He loves holding items close - like his little Mickey or his burp cloth. He is back to babbling and smiling all the time. Still fussy at night, though.  Love this handsome boy.

Making a "Real" Dinner...

Back on Weight Watchers,  I am trying to broaden my cooking skills... Yeah, based on tonight it is gonig to be a long and rough journey!

One of my favorite healthy recipe blogs is skinnytaste.com. Gina has a lot of great recipes and include the weight watchers Points values.

So tonight I made Ground Turkey with Potatoes and Peas. Yes, I actually chopped up a bunch of vegetables. My hand smells so gross, like cilantro I think. It took a long time, probably a good 30 minutes to cut it all up and cook the meat. This is SO not my thing, but it is healthy and 5 points... so that is what is the most important!

It looks a lot better than this picture!


And you know what? it was REALLY good! a bit spicy for me - too much cilantro or cumin I think, but really flavorful and filling. I would make it again... err have Jeff make it ;)
